【椒鹽排骨】
材料:排骨、生薑、大蒜
調料:生抽、老抽、蚝油、椒鹽、胡椒粉、白糖、生粉(澱粉)
【做法】
1.買回來的排骨切成小段,倒入一大勺的生粉,攪拌均勻後用清水清洗乾凈,最後把排骨瀝乾水分備用。
排骨裡倒入生粉可以吸走雜質跟血水,可以讓排骨味道更好。

2.把大蒜剁成蒜末,生薑切成絲備用。

3.排骨瀝乾水分後,來開始腌制一下排骨,把大蒜、生薑放進排骨裡。
然後倒入一勺生抽、小半勺老抽、一大勺蚝油、一勺白糖、小半勺的椒鹽、少許的胡椒粉攪拌均勻後腌制30分鐘。

4.鍋裡倒油,大概燒到5成油溫,然後把排骨下鍋炸,炸至兩面金黃後。
把排骨撈出來放涼一會,繼續把油燒到7-8成熱,把排骨放進油鍋裡復炸30-40秒,最後把排骨撈出來控乾油備用。
