2、將熟花生米用刀背壓碎,香菜切段,小蔥切小段,大蒜切末,將一半的薑切成末;

3、鍋內加水,把雞腿放進去,加薑片和蔥段,倒入料酒,開大火煮開後改中火煮15分鐘,邊煮邊撇去浮沫。關火後加蓋燜5分鐘;

4、撈出放進冰水中,使雞腿涼透,將雞腿斬成塊放在盤內待用;

5、鍋內放油燒熱,下入花椒,下火炸至花椒微焦,將花椒撈出不用;
