1、清炒薯葉
將嫩紅薯葉莖洗凈切段,薑切絲,玉米油或花生油燒熱後下薑絲爆出香味,加入紅薯葉翻炒,加少許水、鹽、蘑菇精,最後淋上小磨香油即成。喜歡勾芡的朋友可以在出鍋前勾芡,使葉菜更加鮮嫩、保持營養。
2、蠔油番薯葉
番薯葉摘去老莖,用清水沖洗乾淨;紅辣椒切成絲;蒜頭拍扁去衣;將1/2湯匙生粉和3湯匙清水調成生粉水;燒開鍋內的水,加入1湯匙鹽和2湯匙油,放入番薯葉燙至葉子變軟,撈起瀝幹水;燒熱鍋內3湯匙油,以小火爆香蒜粒和紅椒絲,倒入1杯清水;加入3湯匙蠔油、1湯匙米酒、1/3湯匙白糖和1/5湯匙鹽拌勻煮沸,倒入生粉水勾薄芡;放入氽燙好的番薯葉翻炒均勻,即可上碟。
3、番薯葉燉冬瓜
鮮番薯葉60克,冬瓜100克,燉煮服。主要治療糖尿病肺胃燥熱型,煩渴多飲、口乾舌燥、形瘦善飢,舌邊尖紅,苔黃幹,脈數。
4、番茄炒薯葉
先將番茄炒出汁,再放入紅薯葉翻炒,最後加調料即成。
5、蒜茸薯葉
將嫩紅薯葉莖洗凈,放入沸水鍋中焯後撈出用涼水沖涼,切成段。大蒜剝皮搗成茸。炒鍋置火上,放素油燒至四成熱,放人大蒜茸炒出香味,加入嫩紅薯葉莖翻炒,加入鮮湯、精鹽、黃酒炒入味,加入味精、麻油,撒上剩餘的蒜茸拌勻即成。
6、涼拌薯葉
取鮮嫩的葉子,用開水燙熟,然後配上香油、醬油、醋、辣椒油、芥末、薑汁等調料,製成涼拌菜,其外觀嫩綠,能令人胃口大開。
